I’m not a huge fan of sweets. Not that I don’t eat them…I just don’t crave them. Do you? My morning breakfast routine is atypical and I don’t enjoy consuming sweet foods in the morning such as cereals, pastries, etc. I have a palette that prefers savory, so this is right up my alley! What do we call this delicious looking breakfast treat? Why, pumpkin pie spread of course! Now, if you do like sweets then load up on the sweetener but don’t tell us. We’re big on monitoring sugar consumption! And if it’s sweet, then honey, it’s sugar!
Enough with the soap box and on to the recipe!
What you’ll need~
A pretty decent blender
A sugar alternative
Ingredients:
1 can organic pureed pumpkin (no sugar added)
1/3 cup coconut butter
2 tbsp. extra-virgin, unrefined coconut oil
1 tsp. pumpkin pie spice
2 tbsp. of your favorite sweetener (for sugar free try a plant based sugar alternative like Stevia)
1/4 tsp. salt (any kind except for processed iodized)
Directions:
Blend it up in your blender! Scrape out the blender and store in the refrigerator. It may harden slightly but not enough to get a knife through.
Serve on your favorite bread. Ours? Ezekiel. It’s a sprouted grain bread but is not gluten free. We believe in sprouting…not processed alternatives! xo
